Pan roasted brussel sprouts are some of my go to meals. Its simple, delicious, and one of my go veggies. I'm not a strick vegan but I do like to make vegan meals to be as healthy as possible.
Alternatively you can add butter instead oil. I sometimes do add honey to counteract the bitterness as well. Its a simple saute that requires very little and you can do this with most green cruciferous vegetables like broccoli and asparagus.
Ingredients
Salt
Pepper
Garlic powder
Onion powder
Crushed red pepper
Avocado oil or extra virgin olive oil

Brussel sprouts are packed with vitamins and minerals. It's a cruciferous green vegetable and are most known to be considered a superfood. It's a good source of fiber and has loads of vitamin C.
Not to mention every vegetable does have some protein so when you add this to a well rounded meal you can get your protein requirements easily.
How to cook
If you have some large brussel sprouts, I like to cut them in half so they can brown on one side and cook faster. Then rinse, drain, and let them sit or pat dry so the excess water can be removed. The water can inhibit the roasting. You want them to be as dry as possible before cooking.
Pre heat your skillet on medium and add your oil. Make sure your heat is on medium as not to burn your oil and degrade it.
Once I throw my food in my skillet I add my other ingredients. At first I try to leave it be and let it brown little and then I'll stir frequently to keep it moving until its nice and tender.
I really doesn't take long to cook and pan roasting is really nice. If you want to lower the fat you can cook them without the oil in non stick pan and keep throwing water in the pan. Its a good technique to keep things oil free. In a way you are steaming them.
